Mediterranean Soup 50 servings 1/4 cup olive oil 3/4 cup small dice Spanish chorizo 3/4 cup small dice smoked ham 1 cup small dice onion 1 cup thinly sliced leeks, white part only 1 cup small dice celery 1 cup seeded, small dice green bell pepper 1 cup small dice carrot 1/3 cup very finely minced garlic 1/3 cup flour 3 cups unsalted chicken broth 12 unsalted beef broth 1/4 teaspoon powdered saffron 1/2 teaspoon savory, or more to taste 1/2 teaspoon oregano, or more to taste Heat oil in a stockpot, over a medium flame. Add ham and chorizo, heat and stir until well browned on all sides. Add onions, leeks, and celery heat and stir for 5 minutes, until tender. Add bell peppers, carrots, and garlic. Heat and stir for 5-6 minutes, until carrots are almost tender. Add flour, heat and stir for 1 minute. Remove from heat; gradually stir in chicken and beef broth season with saffron, savory, and oregano. Add salt and pepper to taste.
